I don’t want to steal his thunder. The only reason I used bread yeast the first time was because I was too lazy to go out to the homebrew store right then. It really didn’t carbonate at all, but I think it didn’t help that it was a really cool weekend.

That’s good to know about the wild yeast. I’ve been told that the wild stuff in this region makes for lousy sourdough, but I was curious what it would do for a brew. I will have to try it out eventually and report my findings.

I agree that champagne yeast is the way to go here instead of bread yeast. It does a great job kicking up the carbonation level pretty quickly and making it more soda like.

The wild yeast is something interesting to try too. It should give it a tart or sour taste to it. A lot of commercial brewers and homebrewers are dabbling with wild yeast in creating gueuze and sour ales. I’ll have to try this out.
